Melt the chocolate using the bain-marie technique (water-bath). Cut small cubes of parmigiano reggiano and with the help of two forks, cover them with chocolate. Put the covered cheese onto a tray covered with a cookie sheet and store in the fridge for 30 minutes. Repeat the process another time to get a thick chocolate layer. Store in the fridge and take it out at least 15 minutes before serving.

Hi Mai! last week i tried your Parmigiano Reggiano & Chocolate reciepe, since it was super easy & fast plus GOOD!..everything went well except for the cheese..it tasted sour and i had a hard time trying to cut small cubes of the parigiano...they were sooo tiny!! and most of them fell apart. I dunno maybe i should have let the cheese stand out for few minutes before cutting? what do u think?
