A Taste of Light: Opéra Cake


This month's Daring Bakers challenge is hosted by DB founders Lis and Ivonne, and two newer members Fran and Shea. It is dedicated to Barbara of winosandfoodies.com. Barbara is the force behind the food blog event called 'A Taste of Yellow' that supports the LiveSTRONG foundation started by Lance Armstrong. And this year's LiveStrong Day happens to be on May.

The challenge was to make an Opera Cake, and no, it not your typical chocolate/coffee Opera, but a light-colored cake. We were forbidden to use any dark flavors or ingredients, therefore I decided to make an almond cake with toffee syrup, whipped dulce de leche butter cream and white chocolate ganache. (I omitted the mousse )

Dulce de Leche - great choice. I love the caramel combination. I'll bet it tasted wonderful.

Your opera cake looks wonderful!! Great job on the challenge. I am a first time daring baker and this was a tough cake :) but a good one, and your's only inspires me to try again!

Caramel is a fantastic choice! Love the gooseberries too! It is sad that I can't find them at my local markets ;(
