Chocoholics Dream..

Okay I admit it. I’m obsessed with chocolate, I can even live on it. :-p But I’m a chocoholic and I can’t do anything about it! As they say on the the ‘12-step chocoholics program’: never be more than 12 steps away from chocolate! =p

I got an amazing chocolate cake recipe from my friend Mrs. G a few days ago, and ever since I made this cake, I’ve been making it everyday for my family and friends. It’s a serious addiction, so beware non-chocoholics, the chocolate invasion is coming! =p

So, if you want to enjoy this ‘mouth-watering’ chocolaty cake , then you better get started and print out this recipe. =D

Chocoholic Cake

Ingredients:

• 1 cup All Purpose Flour
• 1⁄2 tsp Baking Powder
• 1 tsp Baking Soda
• 1⁄4 tsp Salt
• 3⁄4 cup Cocoa Powder
• 7 ounces hot coffee
• 275gm butter ( half will be used for the ganache )
• 2 eggs
• 1 1⁄4 cups sugar

Preheat oven to Gas 4, 180C (350F)

Cream butter, eggs and sugar together
Add dry ingredients ( leave Baking Powder )
Add hot coffee then Baking Powder
Pour mixture into a greased cake tin (see tip)
Cook for 40 minutes in a medium oven
Test middle with knife to make sure cooked - if knife comes out clean, cake is done.

Leave to cool for 10 mins, remove from tin and cool on wire rack
Spread with ganache. You can always add raspberries and some edible gold leaves to the chocolate cake. ;-)

To make the Chocolate Ganache, you will need:

1 ½ lindtt (100 gm) milk chocolate bar
½ lindtt (100 gm) dark chocolate bar

Chop the chocolate then add the rest of the butter and melt them together over a water bath.

In a separate bowl, beat 2 egg whites then add 4 tablespoons of icing sugar till it forms stiff peaks.

Slowly add the melted chocolate to the mixture, and voila! You’ve got yourself an irresistible chocolate ganache!

Tip: When you grease the cake pan, make sure you dust it with cocoa powder instead of flour, to enhance the flavor and gives a beautiful dark color to the cake.
